Using a Pixhawk for Flight Test data acquisition

I would like to use a Pixhawk for Flight Test data acquisition on full-size airplanes. Yes, certified ones. Here’s a little of my background, along with a few ideas, so that all y’all (the experts) can guide me in the right direction … hopefully.

I’m an aeronautical/aerospace engineer that was most recently the chief engineer at Mooney Aircraft. I have my own company now. My entire career has been in, origination and managing Flight Test and Aerodynamics groups. (i.e. I know a little about instrumentation and telemetry ™),

I would like to use a Pixhawk as a miniature data acquisition unit (TM? SD card) for parameters like pitch, roll, heading, GPS data, airspeed, potentiometer positions, etc. I have no need to control anything (at this time … there may be an application later … when I learn more).

Where should I begin? Is this a good idea?
