To switch to offboard mode, It must receive position / attitude setpoints during 1s at 2Hz (“heartbeat”) while the pilot has the control.
What happen to these setpoints? are they ignored? What if the pilot is moving the sticks during this time?

The setpoint values are ignored/not acted on until you switch into offboard.
Moving the sticks may move you out of offboard mode once in it (configurable for MC). I don’t know what happens if you’re about to switch to offboard mode - I suspect that depends on the mode you are currently in.
